Stability of Potassium Carbonate in food industry
It has strong hygrometric property and easily caking. So it is easily deliquesced in the air and can become potassium bicarbonate when absorb CO2, so it is often used as a desiccant in food industry and chemical experiment.
It is highly soluble in water, its aqueous solution is alkaline. But insoluble in ethanol and ethers.
It reacts with chlorine gas to form potassium chloride, and with sulfur dioxide to form potassium pyrosulfate.
